Cooked shell-on prawns – IQF
With great care, the catch is funnelled into the big processing system, directly from the deck of the trawler into the receiving bins, so that the prawns are not damaged.
Hydraulic paddles ensure uniform cooking. The prawns are cooled in clean seawater. Excess water is then blown from the prawns, and loose freezing takes place, all in the space of 15 minutes. Weighing takes place electronically, on scales, which control the conveyor belt.
Production controllers check the amount, weight and appearance, and the result is entered into the ship’s production report.
